In Which Leftovers are Transformed into an Unusual Sunday Lunch for One…

This roll is surprisingly simple to make...

With the rest of the family out for the usual Sunday jaunt out of the house and the help off, I was home alone today, coping with the sweltering summer heat with copious amounts of ginger-infused lemonade and watermelon-spruced iced tea, and not really in the mood to fix anything hot for lunch.

The lazy-arse solution of course, would be to call in for delivery, but that would’ve been selfish and piggy of me; besides, after an all-you-can-eat buffet with college friends yesterday, I was certainly in no mood for restaurant food.  That said, I turned to the kitchen and realized that we had quite an assortment of leftovers lying around.

You know what they say about necessity being the mother of invention?  This was a perfect example of it.

It’s a kimbap-style roll that uses up cold boiled rice, some leftover Spam, and a bit of leftover roast chicken all rolled up in a sheet of nori.  Once the roll is sliced up, I topped it with a bit of sharp Cheddar and finished it in the microwave for about 45 seconds (just till the cheese melted, actually).

The resulting roll was sturdy and satisfying yet still light enough so I didn’t feel like taking a nap after lunch.  With a glass of icy-cold lemonade at hand, my Summer Sunday Roll definitely worked a treat.

Summer Sunday Roll

  • 1 sheet nori
  • 1/2 cup cold cooked rice
  • 1 thickish slice cooked Spam, quartered lengthwise
  • 2 tablespoons chopped cooked chicken
  • 2 slices sharp Cheddar cheese, cut into chunks

Place the nori sheet on a plate.  Evenly spread the rice over it, making sure to flatten down any lumps.  On one side, layer the chicken and Spam and roll the covered nori away from you, making sure to press from time to time to make sure that the insides stick together.  Slice the finished roll into eighths.  Top the roll with cheese and microwave on HIGH for 45 seconds.  Serves 1.
