The two newest additions to the Biscotteria Margherita
menu are actually the end result of my not wanting to waste excess batter from a previous order of cupcakes. When I got home from a delivery, I took the remaining batter from the fridge and took stock of the situation. There was too much of it to just throw away (such a waste!) but not enough even to fill my smallest cake tins. In such a situation, what’s a girl to do?
Why, make cakey Choc-top Cookies and Whoop-de-dos, of course!
I gave the cookies the name “choc-top” not because of the frozen treat, but because they resemble the tops of chocolate cupcakes. Whoop-de-dos, on the other hand, are obviously my personal take on whoopie pies and may be filled with one’s choice of gianduja
, peanut butter, ganache, or cheesecake filling.
