Fish with Lemon-Herb Sauce and Cucumber Shavings

One of the issues I have against most caterers is that they tend to offer menus that tend to feature rich sauces and also go overboard on the carbs.  Thus, I was pleasantly surprised when a recent company function featured food that was actually light and satisfying.

I wasn’t able to get the name of the catering outfit, but they served up delectable meals of grilled chicken with a tangy orange sauce and the steamed fish fillet with lemon-herb sauce shown above.  I’m not really much of a chicken person, so the fish was my meal of choice and I was not disappointed.

Most of the time, the fish served for packed meals is already dry when it’s handed to the diner.  Happily, this was not the case as the fish I got was moist and flavorful despite the fact that there was no butter in the sauce.  The tanginess of lemon went beautifully with the sweet, fresh basil and the crunchy cucumber shavings.

Even the dessert was refreshingly light an cool: canned fruit cocktail was given a power-up by the addition of sliced kiwifruit and strawberries, some fresh mint, and a shot of vodka.  The perfect way to end a healthy but surprisingly delicious meal.
