Unlike my sister who is a major chicken fiend, I like chicken well enough but I wouldn’t exactly eat it on a daily basis.  Once or twice a week is enough, but there are times when only chicken will do.  On seriously bummed-out days at the office, a two-piece KFC meal (Original Recipe, drumstick and thigh only) can set my day back on track.  At home, a whole chicken roasted with soy sauce, ginger, and star anise is the ultimate in comforting dinners.

And there’s this nifty little number from TGIFriday’s: mushroom chicken and mushrooms.  This dish is so named because it features a batter-dipped and deep-fried chicken fillet smothered in mozzarella cheese, parsley, and sauteed mushrooms accompanied by – surprise, surprise! – more mushrooms; in this case, battered and deep-fried into deliciously earthy and savory mouthfuls.

It’s a supremely comforting meal: the savory chicken is seasoned properly and doesn’t go all greasy despite being blanketed by the molten cheese and buttery mushies.  Throw in the mushroom fritters and some hearty rice pilaf and you, my friend, are seriously good to go.
